What is the best method to unistall 6.3 before trying 6.5?

No need to uninstall, you can just download and install 6.5. With that said:

To remove SlimServer on OSX, you would want to remove any of the following:
home -> Library -> SlimDevices
home -> Library -> PreferencePanes -> SlimServer.prefPane
home -> Library -> Caches -> SlimServer
home -> Library -> Preferences -> com.slim*
hard disk -> Library -> SlimDevices
hard disk -> Library -> PreferencePanes -> SlimServer.prefPane
