Can LMS show the Playlist FOLDERS correctly? On the mac Mini, were i run it, i go to Safari and under localhost:9000 i see all the (917) Playlists and i know why i use the playlist folders since ever... ;-)

No, it currently doesn't.

iTunes support is a bit of an issue anyway, as iTunes no longer exists,
and the XML interface we were using with iTunes isn't supported by Apple
Music any more either.

Export of iTunes Playlists
Back in the times when my iTunes library was the source for the LMS, I used the tool itunesexport (name of the Windows version) to transfer the iTunes playlist in a format (*.m3u) that is readable by LMS.

It seems that an app is available in the Mac App Store (name: Playlist Export).
The created playlists must be stored in the Playlist folder defined in the LMS settings.
Maybe that is a solution.
