Not an expert with sort tags, I don't use them.
In mp3tag you can add those fields, Customize columns > New > see pic below, many years since I did this, sorry, can't help more.

Press ALT+T
Click the "New" icon

Could this be due to a misplaced Compilation tag? I have many tracks set up just like you. In my situation, Sting would display among the 'B's, as well as the 'S's.
Do you have any albums by Botti?
I have experienced your issue when the artist is only on a compilation album (IOW, no tag as an Album Artist) in my library.
