I have just installed LMS v8.0.0 on a rpi4b running Raspberry PI OS, Buster-Lite
LMS is running but I can't connect to the weg gui
server logs say

I would stop the service and start LMS from command line. Perhaps you will see the specific error.

I think the suggestion is to start it interactively ... something similar to
perl slimserver.pl
If you take a look inside the startup script you might be able to work out the command line as used.Paul Webster

Well this is embarrassing
I decided this morning to re-download and install the same version.
The web-gui popped up with no problem at all
Intrigued, I did
