Thanks for answering, Michael.
The trouble is when i want to use a BT sink as input, as the tweaks page only allows me to choose from the soundcards installed in my Pi as sources, no BT device.

Connect your phone, then look at the BT logs....can you paste what shows up.

So, what device string and where is it written?

That is writing the output string that pcp-streamer will use. There is nothing to select, it's automatic. Just make sure you connect your phone before starting to play the stream.

I have been confused by the fact that bcm2835 alsa was the only option offered in the tweaks page and this option is always offered even if the BT sink has not been created, so that i didn't imagine i had to actually choose it as an input card ... just because i didn't see any relation between BT and bcm2835...

I'm now in possession of a Pirate Audio board. I've had a brief play attempting to get the audio portion to work with Beta-7, but at the moment it's not being detected.

I'll perform further tests later, and will also try piCorePlayer 5.0 too.

Got the DAC working - need to configure it as a HiFiBerry DAC Zero / MiniAmp.

Sounds great! The sample scripts show that the display is working fine. The scripts for setting up Mopidy also work, but that player is somewhat lacking.
