Presumably one has to use slimserver's web-based GUI
or the squezebox itself to choose the music. You can't
use Foobar2000 to choose the music/playlist and
slimserver to serve it up to the squeezebox?

That's right. The music playing on the Squeezebox itself
can only be controlled through the web interface or
through the remote to the box itself.

Actually, that's not strictly true. There is a command
line interface to the SlimServer, which will let you
interact with the server, but I have no idea if there
is a way of getting foobar to issue commands to it.
