Where can I find a list of all the SlimServer debug options (i.e. what each one actually debugs)?

From the command line, enter

slimserver.pl --help

Thanks. I'm using Windows XP and I have nothing installed that will run .pl
files. How can I do this?

with the service stopped,
try c:\program files\slimserver\server\slim.exe --help

open a dos prompt (start/run/cmd.exe)
and "C:\Program Files\SlimServer\server>slim -h" if you're using
standard installation path.
