I haven't had much luck running softsqueeze on my new linux system... Firefox doesn't seem to know what to do with a JNLP file, nor does it let a "user" add to it's list of file types.

The JNLP file should be opened with javaws. On Ubuntu 7.10 its located in /usr/lib/jvm/java-6-sun-1.6.0.03/bin/javaws . If Firefox isn't behaving try e.g.

/usr/lib/jvm/java-6-sun-1.6.0.03/bin/javaws http://SERVERIP:9000/html/softsqueeze/softsqueeze.jnlp

Oh, and this question probably belongs in the linux-forum.
