Recently, I updated my iTunes from version 7 to version 7.0.2 - now my SB(v3) doesn't want to recognize music that I've added to my iTunes library (in version 7.0.2). How can I fix this?

What format did you rip to ? What platform, Mac or Win XP ?

I'm away from my Squeezebox until mid next week, so I cannot test this on XP.
However, I read that iTunes 7.0.2 does something to your iTunes library the first time it runs, so there may be some changes in the tagging fields, blank in existing tracks, populated in tracks ripped with 7.0.2 that throws out SlimServer.
Log a bug (http://forums.slimdevices.com/showthread.php?t=17481)and send a file that won't play so they can test.

... Any music I've added to my itunes libary since 7.0.2 update will not show up in the server.

Basically it is either not refreshing the music library properly to incorporate any changes, or itunes has indeed done something different.

I am also running OSX 10.4.8, SD 6.5

I guess one has to revert back to the previous version of iTunes. If anyone has a link to the version prior to 7.0.2 (for MAC) - would appreciate if you posted it here.

It is easier than downgrading itunes...

just upgrade to slimserver 6.5.1.

After loggign a bug,(http://bugs.slimdevices.com/show_bug.cgi?id=4468) Chris told me to try 6.5.1 which works like a charm.
