Soft Touch Remote: Off Boresight Performance?

My stereo equipment sits at a right angle to my couch. Presuming I keep
either the original or wireless Slimp3 sitting far enough forward that
I can set eyes on it from where I'm sitting, about how many degrees off
center can I be and still reasonably expect the remote to work?

Up to 80° if you stand up in my experience. Our sofa is a good few feet
away and at 90° to my SLIMP3 and with a bit of arm-stretching the
remote can make a connection. If I'm standing up I don't need to
stretch my arm and can use it from a point at almost 90 degrees to the
bookshelf on which the SLIMP3 sits. In other words, you don't need to
be directly in front of the unit to zap it - it's good.
