Would I be able to stream the audio from a DVD or an mpeg movie through the slim server? Maybe play it in sync with the video?

For Mac:

http://www.rogueamoeba.com/nicecast (Currently in preview version,
costs $30)

That will take audio from any application (DVD Player, QuickTime
Player, in your case) and stream it over the network. Put
icy://localhost:8000 into a playlist and SlimServer will pick up that
stream. Other computers on your network can listen to the stream as
well through Realplayer, WinAmp, iTunes, QuickTime Player...

It runs very competently on my 600Mhz G3 at the same time as the
SlimServer but the more RAM the better.
