What debugging switches should I enable to see what's going wrong when listening to internet radio streams and getting seemingly random lockups and crashes of the SB (Ethernet)?

Crashes? I don't know which switches would be best. But can you reproduce
the issue with some specific stream or does anyone kill the system? And
does streaming of local music files work flawlessly?

You could try the latest 6.2 nightly which contains a health monitor
plugin. It could tell you whether there might be network issues etc.
