Am I lost here or does the bridging feature make it possible to use
SB2 as an access point if it's hooked up to my lan with an ethernet
cable?

Bridging is the opposite of an access point. the bridge is a client to an AP.
I believe Dean has said that they currently saw little value in providing AP
features, given the current glut on the market of cheap AP's
