My thought was that a server is mainly running a limited number of tasks
all day long. And it's always the same set of tasks - once installed they
will run. I don't care so much about disk space. But why care about x
server programs which lower the overall performance, need to be taken care
of etc. if you really don't need them?

It all depends on what you want to do, and I fully agree that a
dedicated server that will only ever be used as a dedicated server can
get slimmed down considerably in what it does. However, X, for example,
is not too fun to install piece-meal if you do eventually decide you
need it. IMO it's easier to install everything and then just make the
one line change in /etc/inittab to run in default level 3 (no X). It's
also fairly trivial to add and remove services from whatever run level
you decide to operate in to make your machine run as streamlined as
possible.

But that's just me. The beauty/horror of Linux is that it's insanely
flexible and the guts and code are exposed for all to see. As they say
in the Perl world, TMTOWTDI.
