The easiest way to do this is to set up a new user account for syncing
your iPod... on this account let iTunes use the default folder for
music (username/music/iTunes/iTunes Music or something similar)

Import the tunes you want for your iPod into this library (you might
need to use an mp3 ripper to convert any lossless/aiff/wav to mp3, i
think iTunes only does it directly from cd). In iTunes prefs/advanced
make sure 'copy music to library when importing' is checked, to stop
any cross referencing to your other library.

In the slimserver web interface/server settings check 'use iTunes
library' and also use the next preference down (not at my slimserver
mac at the moment so can't give a name, but it's obvious) point it to
your other iTunes library (the one with your lovely new imported
lossless files).

When you want to sync up your ipod just log into your 'ipod user
account' before plugging the ipod into the Mac.
