Patch Installer is reporting "No patches found". I'm sure I used to have some in there, but can't for the life of me remember what!

Should I be seeing something in the patch installer list for this version of the firmware?

All the patches I provide have maxTarget in the repository files set to 7.7, which means that they won't appear in firmware beta versions. The reason for this is that I don't want to risk messing up peoples system if Logitech does some change in 7.8 which breaks the patch so it can't be applied correctly. If Logitech would provide detailed information about what changes they plan to do on the SqueezePlay side in 7.8 I could change my mind but with the current level of information I'm going to stick to the principle to not publish patches for beta firmware versions. I usually try to update the maxTarget version in the repository file as soon as possible after Logitech has publish the official x.y.0 release (in this case 7.8.0).

If you really want to install a certain patch and is prepared to take the risk, you can create a copy of the repository file, adjust maxTarget versions and specify the repository file url in LMS Settings/Plugins.

If you make a copy, only include the patches which you want to change in the copied file to avoid that it also override other plugin/applets versions.
