The web UI of LMS "grabbing" (finding) a player can be troublesome. If you had the Controller or a Controller type smart phone app then you could simply select Switch Library on that Controller's menu and it should find your LMS server. There are free smartphone apps for this but the cream of the crop is the venerable iPeng app which I believe is $10.
Beyond that you might have to set a fixed IP for your computer hosting LMS if you want it to always use the same IP.

I do have the iPeng app for iPhone and iPad, but i can't seem to find any "Switch Library" function anywhere. There's something called "Connect Last Server" - perhaps that's it?
I was hoping the players would be able to find the server by looking for its name rather than its IP address.Audio set-up:

Give the server a fixed IP address. Usually this is easily done in the network configuration utility that comes with your operating system.
In my experience the players are capable of identifying a server by name, so maybe there is something wrong with the name resolution on your network. But I still give servers fixed IP addresses -- makes life easier.

I do not use a Controller or smartphone so I am assuming the menu's are the same in layout & functionality as is the Touch & Radio.
Home Menu > My Music > Switch Library, move this to your Home Menu (how to do this on iPeng I have no idea)
Unfortunately, you will not see Switch Library within My Music until the player has actually connected to LMS. This is why moving it to the Home Menu will help as you need not be connected to LMS to use Switch Library, which should see any/all instances of LMS running on your network.

What EXACTLY are you trying to do?
Switch library only works when your player is connected to the server.
Also, iPeng handles this a bit differently since unlike the Logitech Controllers it's not designed to be used with only one player.
Please open the list of players and music sources (on the top right in iPeng for iPad). Here you can select the server you want to use and then you can select the players you want to take with you to the new server, the current one will be selected by default.
If your player has lost the connection to the server, it should also show up here (under "Unconnected Players") and you can connect it to a server by simply tapping it.
HOWEVER, there is a problem with the Receiver in that it often doesn't even notice that it's no longer connected to the server (that's when it's not connected but still shows the white LED), in this case you have no choice but to reset it and do a new setup. But this is actually the same using the Controller (as I can see right now here). You should assign a fixed IP address for your server in the router so that the router always assigns the same IP address to the server.---

Go with what aubuti says. Give your LMS server machine a static IP and you won't have to worry about the server IP changing any more.

Thanks everybody for all your advice. Fingers crossed, the problem seems to have been solved by adding the tag "squeezecenter_name=XXX" in the Udap set-up procedure.
By doing that it seems the receiver can still locate my server even though the IP address changes.Audio set-up:
