Can someone suggest the best converter for the above to do a mass conversion?
All my music is stored in Flac format but I want to do a mass conversion onto my 16gb memory stick. My car stereo will on play MP3/WMA/AAC. What would be the
best quality to use?

I transcode FLACs from my server to AAC @ 320kbps to my Smartphone's 32GB MicroSD card for portable music.
I've got no complaints about quality.
Agree about Foobar - it's a very powerful media player/processing tool.

If you want something to automatically maintain an MP3 copy of your FLAC library then I'd recommend Robin Bowes' flac2mp3 utility.
It'll take a while to initially convert all your FLAC files to MP3 but has the advantage that when you run it thereafter it'll only process any new files or tag changes, so your MP3s will always be up to date.
It's more effort to set up than one of the applications like FooBar but is well worth the effort if you plan to always maintain two libraries.

PS Chris network is still going strong, just need to improve the wireless in the rest of the house now. Rubbish Virginmedia home/super hubs. Going to change the standard aerials.Squeezebox touch
