I want to be able to play the same audio as is playing on a player, but on a sound card in the server running Squeezebox server. I can of course see the player and everything when I browse http://localhost:9000/, but I can't figure out how to stream from the player to the server's audio layer. I am running Ubuntu on the server, by the way.

You will need to run one of the software players on the server, Soft Squeeze or Squeezeplay for example. Softsqueeze is a Java emulator for the IP3K family of players, and Squeezeplay is a desktop version of the software in the Controller Radio and Touch.

Yes, it will act as an additional player -- that's what you need. It is likely that it won't sync well with a hardware player because of various factors (sound card drivers, etc.) that are outside the control of SBS. They can still play the same stream, and as long as you can't hear both the software and hardware players at the same time it might be fine for you. But in general, the software players do not reliably sync. If you want reliable sync you need another hardware player.

Players can be synced, squeezeboxserver has that function .
But note syncing a soft player with a hardware player is not perfect and will never be (operations system drivers lag etcetc, generally not possible to predict for logitech ).
It has to be done with an software player as the server does not send "audio" per see just files or streams to the players .
And it is the players that turns that to audio, so syncing players is also a matter of controlling the rate which the players are outputting audio .
But if the distance from the PC to where you have your squeezebox is big enough, it might not bother you if sync is little bit off--------------------------------------------------------------------

Can I listen to the stream using Winamp on the same PC that is running the server?
According to the features I can, but I don't know how to do it. Maybe this is a stupid question?

You'll only get MP3 quality, though. No lossless sound unless you install a software Squeezebox player.

When you are playing to stream.mp3, a player shows in the web interface. Unless I'm mistaken, you can use settings/player/audio to change the LAME parameters to set the quality/bitrate to your "stream.mp3" player. The bitrate goes to 320K which should be OK for your application.
There is an indication there also that indicates whether you have LAME installed on the SBS machine. If you don't, try a search on "LAME."
