As title really, is there any means (plugin etc.) of having slimserver play material with the genre tag of 'Audiobook' and then resume later from the point playback ceased?

It depends on the audio format of your audiobooks. If they are
native format (FLAC, WAV, mp3) then the bookmark plugin should be an
option (I'm unsure about ogg and wma).
You can save and restore up to 10 different bookmarks. Restoring
jumps to the saved position within a track, but this jump only works
for cases where the audio is not requiring a transcoding command for
playback.
The plugin is available for SS versions 6.2, 6.5 and 7
