The Nightly Builds page is saying:

7.6 - The next major version contains many performance improvements and optimizations intended to improve SBS on low-spec devices. This version will be used for the built-in Squeezebox Server on SB Touch.

With no mention of 7.5 being used for the Touch.

Yes - install SBS 7.6 on an external server and the SBS inside the Touch will update when it connects to the external server.
