What is the best practice when updating using nightly builds- should I uninstall the old one first, then install the new one, or can I just install the new one?

Just install the new one. After installing the new build, the previous build is still available on the hardware as a backup (press-hold volume up key while booting to load the backup build).

Sounds like you're talking about the Jive firmware builds, whereas I got the impression that TD was asking about nightly builds of SlimServer. Or have I got the wrong end of the stick?

I was talking about SC7.
The jive firmware builds are packaged with the SC7 nightlies, so installing the SC7 gets you the latest jive firmware.

AFAICT, they are - you can update the Jive firmware to the latest by simply restarting SC7 - you don't actually have to update to a new SC7 nightly.
Different approach that the SS & SB-firmware interdependency, so somewhat confusing to old-timers!
Current builds of SC7 download Jive firmware every 24 hours. No need to restart.
