is it possible to upload more than one tag with the genre tag? For example "electronic" and "best of 2006"?

yes.
If SlimServer considers the track to have multiple genres they will all be submitted as individual tags.

How must I separate the tags in the genre field?

It's set by the 'multiple items in tags' setting found in Server Settings->Behaviour
